Delicious Creamy Shrimp and Salmon over Rice

Creamy Shrimp and Salmon over Rice makes my mouth water every time I say it. This dish takes the words comfort food to a whole new level for me. I actually borrowed this recipe from CookedByJulie. The very first time I tried it, well lets say it did not turn out the way I thought it would. So when I tried the recipe the second time but I added my own little spin on it and let’s just say it was a wrap if you know what I mean.

Julie’s recipe was very nice but I did not like it with the spinach so I left it out and made okra on the side.

Lets’ start with the ingredients for our creamy shrimp and salmon over rice:

  • 4 salmon fillets (about 6 oz each)
  • 1 lb peeled and deveined large shrimp,
  • 3 cups cooked white rice
  • 6 tbsp butter
  • 6 tbsp olive oil
  • 1 1/2 tbsp minced garlic,
  • 2 cups heavy cream
  • 2 tsp lemon juice
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp dried parsley
  • 1 tsp cayenne pepper (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded mozzarella
  • 1 cup shredded mozzarella

First make sure to pat the salmon dry and season with salt, black pepper, paprika, then drizzle with 1 tbsp olive oil.

Then heat 2 tbsp olive oil in a large skillet over medium heat. Sear the salmon for 4 to 5 minutes per side until golden and flaky, then move to a plate.

In the same skillet, melt butter with the remaining olive oil. Add garlic and stir for 20 to 30 seconds do not brown looking for nice aroma.

Now add shrimp and season with salt, black pepper, remaining 1 tsp paprika, dried parsley, onion powder, and cayenne (optional). Cook for 2 to 3 minutes until pink and juicy.

Let’s start making the delicious creamy sauce, lower the heat and pour in heavy cream and lemon juice. Simmer for 2 to 4 minutes until the sauce turns lightly thick.

Now you going to stir in 1 cup mozzarella (mixed into sauce) until melted and creamy.

Take your salmon and put it in the skillet so it warms in the sauce without drying out.

Then sprinkle 1 cup mozzarella (on top), cover 1 to 2 minutes to melt.

Serve over warm rice I use a rice cooker to cook my rice. That way I do not worry about it coming out saggy. Perfect rice every time. I personally like Jasmine or Balsamic rice. Just saying.

They are a number of variations you can do with this dish or you might not be a rice lover you could serve it over noodles or even mashed potatoes. You could also just use Salmon and no Shrimp or vice versa. Do what ever you like.

So tell me do you like yours extra saucy or are you the one that likes it extra cheesy? I actually like mine extra creamy and extra cheesy. Give me the best of both worlds.

This is one of the dishes I make when I am craving a warm, healthy dish over rice and I don’t have to worry about a sink full of dishes to clean. This garlic shrimp and salmon skillet dinner is the cozy answer for me.

I like to take it a step further by serving it with my favorite bottle of wine. This dish will can be used to create a romantic dinner with your significant other. Trust me they will thank you later.
